I barely turn the wheel and the car turns a lot making it feel twitchy. I’m using 900° rotation, gamma/filter/speed set to zero, scale 100%, soft lock on. Although one thing still confuses me. It seems everyone is recommending to use 900 degrees of rotation for a Logitech G27 wheel. When I set the degrees of rotation to 900 I hardly have to turn the wheel anymore to get around corners. Setting this value much lower (e.g. 540 degrees) forces me to turn the wheel much more "realistic".
